Switch dates from static to dynamic values

I am about to share the water content portal with someone who might have content to contribute. I was just noticing that the date on the top makes this appear stale, but I know there has been content pretty recently. It looks like that date is hardcoded all around the repo (see code search results).

I might make a PR real quick to update it so I can share at least the homepage with a more recent date, but this probably needs a solution that is more dynamic as content is added!

Funny enough just this morning I was looking into this topic in Quarto for another project where the use of dynamic dates appeared to be discouraged (https://quarto.org/docs/websites/website-blog.html):

I think it would be fine to use dynamic values but we'd probably want to find a solution where the date only updates when the page itself changes. I think using something like date: today in the frontmatter would result in the date changing whenever any update is made to the pages.

Oh interesting! Do you think that is specific to using the site as a blog? Because I don't think I noticed that the dates I just corrected impacted the order of the pages at all.
