Trimming past the end point

I want to set the maximum travel of a servo (in this case a sailwinch) and then be able to use the trim switch to alter this position. If a start with the trim at centre and then set the nominal end point, I can only trim to reduce the travel.

I can get round it by starting with the trim towards increased travel, then set the max travel greater than the nominal position, the trim back towards the centre to achieve the nominal position. Is there a better way? It would be easier if there was a way to trim beyond the end point.
