In fact, the Target Language can be directly edited—you just need to change it to it-IT.
This is also stated in the program's built-in tip.

We can’t accommodate all languages. The existing languages were added before the “customize languages” feature was implemented. After that, we have no plan to add new languages, because it was no longer necessary.

Of course, I’d like to know which languages are commonly used, so I can add them to the list. Maybe in the future :-)
