I have a similar issue in Wine / Flatpak: the audio tab hangs with pulse audio driver (no relation to win11). Might be the same or related. Could you please check if your sound driver is pulse (winetricks sound=pulse), and if the problem occurs when the sound driver is alsa (winetricks sound=alsa)?

This bug does not seems related to Bottles but the flatpaked wine itself. Closing but feel free to add more comments to re-open it.
