[Docs] Loki rock docs need to be updated to v2

Work has been started on updating the loki rock docs to v2 using the [new syntax](https://github.com/canonical/oci-factory#documentation-trigger-file). This work can be found in #915 . Input from maintainers (@canonical/observability) is needed.
