Idea: Add support for Vercel AI Gateway

Hey everyone! 👋

First off, loving 9router so far! I was wondering if there are any plans to add Vercel AI Gateway as a supported provider?

Vercel's AI Gateway is super handy since it gives us features like caching, rate limiting, and analytics right out of the box. Since it basically acts as a proxy/wrapper for various models (OpenAI, Anthropic, etc.), it would be awesome to have a seamless way to route our requests through it using 9router.

Maybe we could add a dedicated vercel provider, or perhaps just a clean way to override base URLs and headers for existing providers so they can point to the Vercel Gateway endpoint?

Would love to hear your thoughts on this! Let me know if it's something that might fit into the roadmap. Cheers! 🍻
