Remove QuestDB Dependency and Upgrade to JDK 21

We want to make JBake lighter and get rid of QuestDB. That can be done all in memory for most projects, and for others, we can certainly include something more compact in the future.

Also, JDK 21 and a modern Gradle are certainly desired too.
