Add Go Interview Practice to Community Resources

Hey Echo team! 👋

I've created an interactive learning platform for Echo and thought you might be interested in it. The Gin and Fiber teams were really supportive when I did something similar for their frameworks.

The platform is at https://github.com/RezaSi/go-interview-practice and has 4 hands-on Echo challenges covering routing, middleware, validation, and authentication. Developers can practice Echo without any setup - just jump in and start coding.
