Bump esperanto to 2.25.1 and adopt everything it unblocked. Execution complete — see the closing comment. Remaining items are design work tracked in their own issues (#1171, #1087, #1169).

• Locked was esperanto 2.22.0; now esperanto>=2.25.1,<3 on main (PR chore(deps): bump esperanto to >=2.25.1 #1176).

ElevenLabs scribe_v2/eleven_v3 shipped separately via #1167. The default_model= deprecation was a no-op (no custom profile registered). Main is on esperanto 2.25.1 with 596 backend tests + frontend build green; the registry gained novita/ppq/cohere/omlx/anthropic_compatible and extended openrouter/deepgram.

Remaining work is design-only and continues in its own issues — not blocked on this umbrella:
