Fix Cloud tests

We have the cloud tests which are currently failing https://github.com/mondoohq/mondoo-operator/actions/workflows/cloud-tests.yaml

We need to fix those and re-add the cloud tests badge to the readme file which was removed with #1249

when this is complete, we should also update the README file to note the versions we use for testing on each cloud provider
