Jellyseerr to Seerr Migration

Just creating this to discuss how to handle the migration for the Jellyseerr community container. See https://docs.seerr.dev/blog/seerr-release

I could either edit the existing Jellyseerr container so that existing installs get upgraded automatically or create a new community container for Seerr and have users migrate manually by disabling Jellyseerr and enabling Seerr. Leaning towards the former option atm. Only issue is for a smooth migration I think certain things will remain named Jellyseerr instead if Seerr which may be confusing. I'll create a pull request soon.
