[shelly] README: drop unregistered Shelly Eye row from device table

shellyseye is mapped in ShellyDevices but has no thing-type XML
descriptor, so discovery can point at a thing type openHAB doesn't
actually register. Remove the row this PR added until Shelly Eye is
fully supported.
