Add Document APIs to TestDataService

There are currently 2 Admin tasks for Orders in the main shopware repo:

AddCreditItemViaAPI.ts
CreateDocumentViaAPI.ts

It would be very helpful to add these to the TestDataService which serves as our current collection of API's, and so they are packaged within the ATS, itself.
