IS THERE ANY WAY TO USE THIS DISPLAY WITH THIS CODE -ESP32 Dev Board – 2.8 inch 240×320 Smart Display TFT with Touchscreen CYD – “Cheap Yellow Display” (ESP32-2432S028R) -- WOULD BE THE ROAD TO LEAST RESISTANCE

Yes, it would take little editing to use that as the display of the Digital ReadOut. To use it as a touchscreen, a bit more programming. At that point, I suggest using a phone -based pendant instead, like the one in Universal Gcode Sender. The disadvantage with phones and touchscreens is no tactile feedback, so you must always be looking at the screen when you issue commands. Hitting the wrong thing by accident is too easy.
