Includes patch to configurably use PsychicHttp instead of AsyncWebServer

I updated the code (Jan 2026) to support the latest PsychicHttp code (many elements had changed in this interface). I thought I had updated to head of ElegantOTA but GitHub is still claiming I havent - I will have another look at this one day as it works fine as is for me.
