Bump to the latest validator (published from TightknitAI/slack-block-kit-validator#61). Note: 0.1.11 declares the same `ajv: ^8.18.0` range as 0.1.10, so on its own it doesn't move block-kitchen's transitive `fast-uri` off 3.1.3 — the GHSA-v2hh-gcrm-f6hx audit finding (patched >=3.1.4) is unchanged by this bump.
