Log to stdout or stderr

It would be nice if you could choose to log to stdout or stderr. It seems like it always logs to stdout now.

Fair point, this could be configured and for now I went with the simplest (since usually docker or k8s would pick it up anyway). I don't think it's too much work to get that configurable. I'll keep it up until I fix it :)
