I think that we have a bug on the docker-compose deployment, I propose to fix it before merging the helm chart version. |

This PR adds the Kafka Prometheus exporter in order to retrieve more metrics from the Kafka deployment.This PR adds the Kafka Metrics Receiver to the otel collector configuration to export metrics from Kafka.
