This allows finer control of env vars
Previously we tried to assign to an `any` value, assumed to be an object. In certain cases it could be a primitive, so non-assignable, which threw errors. Now we handle that case correctly.

I've noticed an issue with the postinstall script. I think I already know how to fix it, I'm writing this here to remind myself to fix it later today or tomorrow. |

This PR addresses some friction that existed when subscribing to Soroswap contracts. The GraphQL queries have been improved in general, as well.
