docs: remove sunset zkEVM + dead Goerli refs (2026-04-17)#75

Polygon zkEVM is in SunsetChainId in pancake-frontend (packages/chains/src/chainId.ts). Goerli testnets (ETH, Arbitrum, Base, Linea) are deprecated; Sepolia is the replacement. Removes zkEVM and *Goerli rows from v2/v3/universal-router/permit2/cake address tables, and removes zkEVM and ARB Goerli endpoints from apis/subgraph.md.
