Changes

Mend's GitLab.com support has been around for a little bit, but we've
not explicitly documented it.

While we're doing this, we should make sure the outdated references to
GitLab security is updated in line with the current state of affairs.

With some additional research from Claude Opus 5, but with Claude Sonnet
5 driving the changes.

We can also make sure to clarify that folks may want to use Mend-hosted
against GitLab.com, and that there are security implications when
running Renovate on GitLab (more generally).
