refactor: add support for postgres store(s)

This will remain in draft until:

• corresponding changes are prepared in sprue
• better documentation exists, minimum more words than this PR description currently has
• further evaluation of schema design. Migration logic is implemented as it will be needed eventually, but given there is no production deployment of this service migrations out to be avoided to keep schema clean.
