Enhanced the logging utility to redact sensitive values (like API keys and JWTs) found within strings, providing a defense-in-depth measure against accidental secret leakage in logs and error messages.

PR created automatically by Jules for task 13278404297686571434 started by @tblakex01

- Added `SENSITIVE_VALUE_PATTERNS` to `utils/logger.ts` to detect and redact API keys (Google AI, Stripe, etc.) and JWTs within string values.
- Updated `sanitize` function to apply these patterns to string values, including `Error.message` and `Error.stack`.
- This prevents sensitive credentials from leaking into logs or error reports if they are included in string concatenations or error messages.
